Okra Curry

Ingredients

  • 500 g fresh okra
  • 2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 2 tomatoes, diced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon chilli powder (optional)
  • Salt to taste
  • Fresh coriander for garnish

Preparation

Wash the okra thoroughly, then trim the ends and, if necessary, cut them in half to get the right size. In a large pan, heat the vegetable oil and add the finely chopped onion. Sauté on medium heat until it turns translucent. Next, add the diced tomatoes and continue cooking until the tomatoes soften and form a sauce-like consistency. Stir in the spices – turmeric, coriander, garam masala, cumin, and chili powder (if using) – and mix well. Sauté for a few more minutes to allow the spices to release their aromas.
Now, add the okra to the pan, season with salt, and cook on low-medium heat, stirring occasionally, until the okra becomes tender but doesn’t fall apart (about 15-20 minutes). Garnish with fresh coriander and serve this flavorful, mouth-watering dish!

If you want the okra to be less slimy, first fry it in a dry pan for a few minutes, stirring constantly, then continue with the recipe.
Serve with rice or naan bread.
