Almond vegan cake

A delicious and simple almond vegan cake is a great choice for Christmas or as a gift!

Ingredients

200 g almond flour
100 g oat flour
100 g brown sugar or coconut sugar
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 tsp ground ginger
2 tbsp flaxseed meal (egg substitute)
60 ml water
80 ml coconut oil
2-3 tablespoons vegetable milk (e.g. almond milk)
Top with a handful of sliced almonds

Preparation

Preheat the oven to 180°C and line a baking tray with baking paper. In a large bowl, mix together the dry ingredients: almond flour, oat flour, sugar, baking powder, cinnamon and ground ginger. In a smaller bowl, prepare the wet base: mix the flaxseed meal with water and leave to stand for 5 minutes to make a jelly-like consistency. Add the coconut oil and vegetable milk, then pour the mixture into the dry ingredients and work the dough together. Using your hands or a spoon, form small mounds of the mixture, flatten them out into biscuit shapes and sprinkle with sliced almonds. Place the biscuits on the baking tray and bake for 10-12 minutes until golden brown. Cool them and store them in an airtight container to keep them fresh for a long time.

OMA Tip

If you like, you can also add a little orange zest to the dough to make it taste even more Christmassy.
Wrap the biscuits in cellophane and decorate with ribbon for the perfect gift!
